<p>A process for producing novel yeast, which comprises merely culturing budding cells from zygotes obtained by mating spores of diploid or higher polyploid homothallic yeast as parent strain with karyogamy mutant cells having a killer factor, and a process for brewing wine using the obtained yeast. The resulting yeast has the same polyploidy as parent strain and has a killer factor. The yeast-producing process is also useful for introducing genetic factors other than the killer factor present in cytoplasm without changing genetic character and polyploidy. The use of the killer yeast in brewing wine enables production of quality wine by depressing unfavorable stain by Saccharomyces bayanus.</p> |
