The aqueous microencapsulation process comprises using lacca gum as the material for forming the membrane, which makes it possible to obtain a gastro-resistant membrane based on a natural substance, overcoming the difficulties inherent in the use of lacca gum by means of a phase of acidification and separation of the microcapsules, carried out with parallel and uniform lowering of the temperature and pH of the system.
