PURPOSE:To reduce the generation of sludge during the heating of a soy sauce, by inactivating the alkali protease in the untreated soy sauce with an inhibitor. CONSTITUTION:The alkali protease in untreated soy sauce is inactivated by adding potato inhibitor separated from potato as an inhibitor to the soy sauce, and the soy is heat-treated. As an alternative method, the alkali protease is removed by passing the untreated soy sauce through a column, etc. packed with a gel obtained by insolubilizing the potato inhibitor. |
