CONSTITUTION:The alkali protease in untreated soy sauce is inactivated by adding potato inhibitor separated from potato as an inhibitor to the soy sauce, and the soy is heat-treated. As an alternative method, the alkali protease is removed by passing the untreated soy sauce through a column, etc. packed with a gel obtained by insolubilizing the potato inhibitor. |
