PURPOSE:To amend crackes occurring on a koji substrate during koji preparation without requiring man power, by making cracks occur collectively on cut parts preformed on the given positions of a koji substrate on a koji preparation floor, correcting the cracks by an amending device. CONSTITUTION:A cut part is preformed on a koji substrate. For example, the cut channels 7 having a given depth are set concentrically at given intervals on the koji subtrate 4 piled on a rotary disc floor. When the cut channels 7 are set, cracks occur collectively on the channel parts 20-30hr after the piling of the koji substrate. When the cracks occur, air starts to pass through the crack parts, wind pressure of the air fan chamber 2 under the disc floor is reduced, and the occurrence of the cracks can be found by detecting the reduction in wind pressure. Consequently, a lift of the amending device 8 is operated automatically so that the roller 10 and the raking plates 11 are dropped on the koji substrate. The cracks produced on the cut channels together with the cut channels are crushed automatically by the roller, and the koji substrate is raked by the raking plates 11 and 11 and made flat. |
