The prodn. of cutlet having good freshness and flavour comprises (a) cutting the fish(1) into short pieces, (b) impregnating in spices(2) and momtmorillorute(3) (particle size, 10-50 μm), (c) coating with flour(4), (d) impregnating in egg(5) and (d) coating with bread crumb(6). The momtmorillorute powder comprises 18.42 g Al2O3, 62.55 SiO2, 1.17 Fe2O3, 0.88 CaO, 5.40 MgO, 0.53 K2O, 2.84 Na2O, 5.71 H2O+, and 5.04 H2O.
