发明名称 PREPARATION OF BOILED RICE FOR PRESERVATION
摘要 PURPOSE:To obtain high-quality boiled rice for preservation free from crush of boiled rice, by gelatinizing only the surface of rice granule by the first treatment, cooling it with water within five minutes, distributing them to containers, boiling the rice by the second treatment. CONSTITUTION:Raw rice is subjected to the first treatment wherein it is washed with water, immersed in water, dehydrated, heated in the presence of a small amount of water, so that only the surface part of the rice is gelatinized. Cold water at <=15 deg.C is added to the rice within five minutes, the rice is cooled quickly. It is distributed, weighed, and packed into containers with a proper volume. The distributed rice and a proper amount of water are hermetically sealed in the containers, and boiled under heating, to give boiled rice for preservation. In the first treatment, the following process may be carried out, namely, hot water is added to washed rice, which is heated in a short time, the rice granules are filtered off, separated, and cooled with cold water quickly.
