A heat-cooking apparatus such as an electronic oven of a type having an oven cavity, a heat source, an infrared detecting equipment adapted to detect the rate of radiation of the infrared rays from the surface of the material under cooking and a controller for controlling the heat source in accordance with the output from the infrared detecting equipment. The infrared detecting equipment includes a reflective plate and a shield cylinder which in combination ensure a highly efficient and accurate detection of the infrared rays over a long period of time.
