PURPOSE:Granular food is combined with mucilagenous substance of NATTO, water and sugar they are mixed, made into an appropriate size, and dried to give a OKOSHI (Japanese millet-and-rice cake)-like food composition with low sweetness, easily melting in the mouth and giving soft texture. CONSTITUTION:A granular food such as granular sugar, beans, nuts, dried small fish, chopped sea tangle is combined with a mucilagenous substance from NATTO (a Japanese food of fermented soybean) and, when necessary, sugar and they are mixed to give a base. Then, the base is made into a shape of an appropriate size and dried, or the base is made into a shape of an appropriate size as a food product. The resultant food product shows a plain and low sweetness and gives soft and light crushable texture without heat deterioration in comparison with conventional OKOSHI coated with condensed syrup. |
