PURPOSE:To prepare a TEMPURA food (Japanese deep-fat fried food) having taste and flavor of cuttlefish and excellent preservability, by using dried cuttlefish powder and a ground meat of fish or shellfish as raw materials. CONSTITUTION:The arms, fins, or body of dried cuttlefish, or their scraps are crushed to about 1-0.1mm. diameter, and the obtained cuttlefish powder is mixed with the ground meat of fish or shellfish such as cod, cuttlefish, etc. The mixture is optionally added with arbitrary seasonings, etc., stirred, mixed, and formed to a web, which is dried, roasted and stretched to obtain a soft and tough pastry. The pastry is formed to a proper size and shape, coated with a coating composition containing the above cuttlefish powder, and fried in a frier keeping the temperature of the oil high at the initial stage, low at the middle stage, and to an ordinary oil temperature at the final stage. |
