A method for the quantitative determination of unsaturated fatty acid in a liquid, in which the liquid is treated with lipoxygenase in the presence of oxygen to convert the unsaturated fatty acid into its peroxide, and then peroxidase and a hydrogen donor which is to be subjected to oxidation are added, and then the detectable change in the reaction system is measured by spectrophotometric means.
