PURPOSE:To produce the titled food having good taste and improved flavor, by blending grain flour comprising wheat flour as a main component with a gummy polysaccharide and water, molding, steaming and freezing. CONSTITUTION:Grain flour comprising wheat flour as a main component is blended with a gummy polysaccharide (e.g. xanthan gum) and, if necessary, sugar, salt, an edible dyestuff, seasoning, etc., to give a raw material, which is mixed with 40-85wt% water within 10min to give a mixture. Then, the mixture is molded into a desired shape, steamed at >=90 deg.C for 3-10min and frozen <=-18 deg.C. |
