A dry beverage mixt. based on sucrose, contg. powdered acidulents and flavours contains 0.05-5.0% wt of finely divided colour-plated tri-calcium phosphate (TCP) particles. The particle size of the TCP is such that at least 40% will pass a US 200 mesh screen. It is plated with colouring matls in the presence of water, then dried to a moisture content of less than 0.5% prior to addition to the sucrose etc. Portions of the colouring are transferred to the sugar. Colour can be easily and quickly dispersed in the mixt. and deeper colours can be given to the dry mix. without the necessity for introducing high levels of moisture, as when the sugar itself is colour-plated.
