PURPOSE:To obtain a food additive transferrable from a liquid to a solid states and vice versa reversibly according to the degree of the cold and warm states, by adding various weakly basic substances or strongly basic substances in a very small amount ot a hydrous raw material of KONJAK (devil's-tongue), and heat-treating the resultant mixture at a specific temperature or above. CONSTITUTION:One or more Na salts of organic acids or together with CaCO3 or MgCO3 are added to an aqueous solution of KONJAK root (devil's-tongue root) or flour thereof, i.e. a sol-like or gel-like substance, and mixed. The pH value of the resultant paste is adjusted to a basic value within 10. The paste is then heat-treated at 70 deg.C or above to give a reversible KONJAK (devil's- tongue) which is a liquid or paste in a cold state and soft or firmly coagulated in a warm state. The Na salts of the organic acids are sodium citrate, sodium tartrate, sodium malate, sodium lactate, sodium acetate, sodium succinate, etc. The resultant reversible KONJAK is individually used as a food or an additive in various foods, e.g. CHAWANMUSHI (pot-steamed liquid hotchpotch) or pasty TOFU (bean curd) cut in cubes. |
