PURPOSE:To prepare the titled compound useful as a starting raw material of phenylalanine, etc., extremely effectively, in high yield, by reacting a fatty acid vinyl ester with a nitrogen oxide in a solvent in the presence of O2-containing gas, and then reacting the product with an alcohol. CONSTITUTION:The objective compound is prepared by reacting the fatty acid vinyl ester of formula (R is 1-18C alkyl), e.g. vinyl acetate, vinyl propinate, etc. with nitrogen oxide in a solvent such as ethyl acetate, CCl4, etc., in the presence of an O2-containing gas at -5-+50 deg.C under atmospheric pressure or positive pressure, and reacting the resultant compound with an alcohol, e.g. a 1-18C aliphatic alcohol, alicyclic alcohol, etc., at -30-+50 deg.C under atmospheric pressure or positive pressure. The nitrogen oxide is, e.g. NO, N2O3, NO2, etc. The yield can be further improved by adding dimethyl sulfoxide, urea, etc. to the reaction system. USE:Starting raw material of amino acids such as tryptophan, etc.
