<p>Saccharomyces cerevisiae hybrids NCYC 995 (I) and NCYC 996 (II) are new. Pref. (I) and (II) are obtd. from the strains described in US4318929 and US4318930 by the method described in BE-862191. Also claimed is the prpdn. of compressed fresh yeasts and dried yeasts contg. (I) or (II). The compressed yeasts have a solids content of 28-35%. The dried yeasts contain at least 92% solids and are pref. in the form of fine porous granules having a solids content of 94-97% and contg. an emulsifier. (I) and (II) are esp. useful for bread making. They can be grown on sugar beet molasses in higher yields than known strains, can be dried to a solids content of 92% or more in the presence of an emulsifier, and have the same activity whether rehydrated at 38 or 20 deg.C. They may also be used for brewing.</p> |
