A machine for slicing or removing skin from meat or fish comprises a pair of horizontal conveyors with a blade situated between them so that the flesh being drawn from one conveyor to the next is skinned by the blade. A toothed wheel for gripping the skin is located just ahead of the blade and a series of spring-loaded rollers bears upon the flesh above the toothed wheel, forcing the wheel to grip the skin.
