PURPOSE:To prepare liquid MISO (fermented bean paste), by stirring the miso at an arbitrary stage during the preparation process. CONSTITUTION:For example, in the case of liquefying by stirring at the stage of adding malted rice, salt, water and protease-producing yeast, the steamed or boiled soybean is crushed, and stirred together with malted rice (or barley), salt and water in a stirrer such as high speed rotary mixer. The liquefied product is aged in an aging vessel. |
