The process is characterised in that after the plants or their fruit have been broken up and before they are subjected to a diffusion operation, chemical agents, especially bisulphites and/or dihydrogen phosphates are distributed onto them by spraying at room temperature. More particularly in the case of the extraction of sugar from sugar beet broken up into thin strips, known as chips, and before the latter are subjected to a diffusion operation, chemical agents are distributed onto the latter by spraying at room temperature and diffusion juice is then extracted, the latter being subjected to a calcocarbonic purification operation or further treated directly after heating and filtration in the presence of a filter aid, through ion exchange resins and/or through semipermeable membranes.
