PURPOSE:To provide a seasoning composition having extremely low irritant taste and disagreeable taste originated from KCl, and capable of restricting the excessive taking of salt and exhibiting excellent seasoning effect, by using NaCl, KCl, and a mixture of a glutamic acid salt and a nucleic acid seasoning material at specific ratios. CONSTITUTION:The seasoning composition containing 40-84.5wt% NaCl, 15- 40wt% KCl, and 0.5-40wt% mixture of 1pt.wt. of a glutamic acid salt (e.g. sodium L-glutamate) and 1-0.005pt.wt. of a nucleic acid seasoning material (e.g. sodium 5'-inosinate). The seasoning composition has, in addition to the above features, excellent taste having deliciousness, thickness and mildness, and can be used in the similar manner to the conventional seasoning composed mainly of NaCl. |
