<p>PURPOSE:To obtain fruit wine having fragrance of superior quality and high quality stability, by adding a wet mold of Botrytis cinerea to unrefined fruit wine before or during alcohol fermentation. CONSTITUTION:Botrytis cinerea (e.g., Botrytis cinerea ATCC 20599) is inoculated into a medium to be used in the cultivation of a common filamentous fungus, cultivated aerobically, and a wet mold of Botrytis cinerea is separated from the culture by centrifugal separation, etc. While a saccharide, organic acid, etc. is added to crushed fruits or fruit juice obtained by treating fruit such as grape, apple, etc. to prepare a raw material for fermentation. Yeast such as wine yeast, etc. is inoculated into the raw material for fermentation, about 0.01- 4wt%(W/V) wet mold of Botrytis cinerea is added to the raw material before or during fermentation, and the raw material is treated conventionally to give the desired fruit wine.</p> |
