A method of producing an improved spray dried dipeptide sweetener is described. The method consists of the formation of a dipeptide sweetener solution with an acid/enzyme/acid hydrolyzed oligosaccharide, pressurization of the solution and injection of carbon dioxide gas before feeding the resulting mixture to a spray drying nozzle. |
