Extn. of soluble sugars from fragmented plants or fruits (esp. sugar beet cossettes) is effected by subjecting them to a diffusion operation after spraying at ambient temp. with chemical agents (I). In one set of claims, (I) are not further defined in the main claim. In another set, (I) comprise one or more of (a) bisulphites, including Ca bisulphite, (b) dihydrogen phosphates, including Ca(H2PO4)2, and (c) soluble salts having a tri- or tetravalent ion. Pretreatment with (I) improves the purity of the juice, giving improved colour and reduced Ca content after liming. |
