摘要 <p>Anti-stick coating agents for cooking utensils contain as an essential ingredient a phosphate or polyphosphate ester of a fatty acid di-ester of glycerol (preferably in the form of its neutral sodium salt) of general formula CH2.(O.R1).CH.(O.R2).CH2.O.R3, wherein two of the groups R1, R2 and R3 are fatty acid groups occurring in animal or vegetable oils or fats and the third group is an ortho- or pyrophosphoric acid group. In preparing fatty acid esters of glycerol containing one free hydroxyl group, fatty acid monoglycerides or their mixtures with fatty acid diglycerides (in which the fatty acid groups present may be derived from saturated or unsaturated fatty acids) are subjected to a pretreating step to convert the monoglycerides present into diglycerides, comprising heating the glyceride mixture for a period at 120 DEG C. in the presence of an agent suitable for introducing the phosphate radical (prior to the phosphatization proper). Under these conditions the reagent acts as an interesterification catalyst converting the mono-glycerides into di-glycerides and liberating glycerol in which the catalyst dissolves. In the examples "Myverol" (Registered Trade Mark) is used as the fatty material to prepare the phosphate ester. The phosphatizing agents are phosphorus pentoxide, phosphorous halides, or any equivalent reagent. Details of the phosphatizing step are given in the examples. U.S.A. The coating agent containing as an essential ingredient a phosphate ester of a fatty acid di-ester of glycerol of general formula CH2.(O.R1).CH.(O.R2).CH2.O.R3 wherein two of the groups R1, R2 and R3 are fatty acid groups and the third is an ortho- or pyrophosphoric acid group, may be blended with oil and the ester or ester-oil blend is added to the container prior to attaching the cap and valve. The propellant (preferably a normally gaseous chlor-fluorinated aliphatic hydrocarbon) is charged through the valve in liquid form under pressure at room temperature. U.S.A. An edible vegetable, animal or non-toxic mineral oil may be mixed with the phosphate ester prior to application, the proportion of the ester being at least 10%. The phosphate ester is applied to cooking surfaces by brushing, or from a polythene squeeze-bottle, or preferably by spraying from an aerosol container in which the gaseous propellant is a chlorfluorinated aliphatic hydrocarbon. The ester may also be applied as an emulsion. Phosphate esters may be prepared from a fatty starting material comprising monoglycerides of hydrogenated lard or cotton oil fatty acids having the Registered Trade Mark "Myverol", the monoglycerides being converted into diglycerides by a pretreating step prior to phosphatization.
