PURPOSE:The cultivation of a mutant in Saccharomyces, capable of producing glutathione, produces glutathione in high yield. CONSTITUTION:A mutant in Saccharomyces, resistant to 1,2,4-triazole or sodium azide and capable of producing glutatione, e.g., Saccharomyces cerevisiae TRZ-6 (FERM-6214) resistant to 1,2,4-triazole derived from Saccharomyces cerevisiae ATCC7754, is aerobically cultured at 20-40 deg.C and 3-8pH and glutathione is collected from the cultured cell bodies. |
