PURPOSE:To enable the long-term storage of cut raw rice cake without getting white mold spots, by sealing a cut raw rice cake containing less than specific number of living general microorganisms together with a specific disoxidation agent with a gas barrier packaging material or in a gas barrier container. CONSTITUTION:A cut raw rice cake is prepared so as to contain <=10<3> living general microorganisms per 1g of the cake. The rice cake is sealed together with a disoxidation agent having an oxygen absorption rate of >=2cc/hr per 1g of the agent at 25 deg.C and an oxygen absorption capacity of >=30cc per 1g of the agent, with an essentially gas barrier packaging material or in a gas barrier container. The amount of the disoxidation agent is >=0.5pt.wt. per 100pts.wt. of the cut raw rice cake. The oxygen content in the sealed system is decreased to and maintained at <=0.1% by this arrangement. The oxygen concentration is preferably decreased to <=0.1% within 12 hr at 20-30 deg.C, or within 24hr at 10-20 deg.C, or within 48hr at 5-10 deg.C. |
