PURPOSE:To prepare seasoned TORORO-KONBU (tangle flakes scraped with a blade) which can be cooked rapidly, giving the same thick soup as original TORORO-KONBU, by spraying mist of a seasoning liquid to fine chips of dried TORORO-KONBU, and quickly drying the product. CONSTITUTION:Dried TORORO-KONBU is formed to small pieces of about 4mm. in diameter e.g. by crushing, suspended in air on a proper disc-shaped dish, etc. by agitation, vibration, etc., and sprayed with mist of a solution of a seasoning (pref. an alcohol solution to attain rapid drying). The TORORO-KONBU moistened with the solution is dried quickly to obtain the objective seasoned TORORO-KONBU. The product gives a thick soup in contrast with conventional seasoned TORORO-KONBU prepared by immersing in a solution of seasoning sollowed by drying. Since the seasoned TORORO-KONBU can be cooked without using additional seasonings, it is useful for the instant cooking. |
