PURPOSE:To suppress the pollution of microorganism and its propagation at the early stage of the feed of unrefined soy sauce and to prepare new soy sauce having a good taste in high yield, by crushing or slicing a koji material so that new cross-sections are made after koji is prepared, feeding it together with a solution of salt to a fermentation tank. CONSTITUTION:In before or after the process of blending of a solution of salt from the end of koji preparation to the fermentation tank, a koji material is crushed or sliced so that new cross-sections are made, and it is blended uniformly with a solution of salt. |
