PURPOSE:To provide a fading inhibitor for carotenoid or anthocyanin coloring matters, which is suitable for use in food and drink and has improved resistance to fading or discoloration, containing chlorogenic or caffeic acid as an active component. CONSTITUTION:A fading inhibitor contains, as an active component, chlorogenic acid separated from natural products and/or caffeic acid which is synthetic or separated from natural products. This fading inhibitor is useful for carotenoid or anthocyanin coloring matters, is suitable for use particularyl in food and drink contg. these coloring matters, and can impart an excellent fading-inhibiting effect to food and drink without unfavorable change in the flavor of food and drink. Chlorogenic acid is a compd. of formulaIand is contained in coffee beans, tobacco leaves and sweet potatoes. Caffeic acid is a compd. of formula II and is contained in the bark of conifer, polygonum and coffee beans. |
