PURPOSE:A fish is dressed into three pieces, the skinless fillets free from bones is seasoned with a seasoning such as salt, roasted to such a level as a scorch pattern is formed on the surface and frozen, thus making frozen roasted fish, which is unnecessary to be roasted on cooking. CONSTITUTION:A fish such as cod, walleye pollack, Akta mackerel, sea bream, salmon, mackerel is dressed into three pieces and skinless fillets, are further divided into the bone-free part and the bone-containing part. The bone-containing part is ground with a meat collector. The boneless fillets are combined with the ground meat, salt polymeric phosphates, flavors, spices and water and they are kneaded with a mixer. The mixture is immediately charged in a freezing pan into a block, thus forming a frozen block. The block is sliced, immediately heated to such a level as a scorch pattern is formed on the surface. Then, the slices are placed in a container and frozen. |
