PURPOSE:To prepare hand-made SOMEN (a kind of very thin white vermicelli made of wheat flour) having the refreshing taste and flavor of beefsteak plant, by kneading wheat flour and the leaves of beefsteak plant water, rolling and flatening the dough, scattering powder of beefsteak plant leaf to the surface of the pasta thus obtained, and making the pasta to noodles. CONSTITUTION:100pts.wt. of wheat flour and <=0.3pt.wt. of beefsteak plant leaf powder having a particle size of finer than 40 mesh is kneaded with a proper amount of water, and formed to a pasta 4 having a width of about 10cm and a thickness of about 4cm. The pasta 4 is aged, and rolled to a thickness of about 1cm. 0.2-4pts.wt. of powder of beefsteak plant leaf is scattered to the surface of the pasta 4, and the pasta is rolled up wrapping the surface 5 scattered with the powder with the lifted side walls 6, 6'. The whole pasta is transferred to the direction of the arrow, and shaped to a rod having an outer diameter of 2-3cm. The pastry rod is stretched by hand to obtain noodle having a diameter of 0.7-1mm. and containing 0.5-4pts.wt. of the powder of beefsteak plant leaf. |
