PURPOSE:To titled vitellus solution having improved properties like one stored in a frozen state, by thickening the vitellus solution by heat treatment. CONSTITUTION:A vitellus solution is heat-treated in such a way that it has a viscosity reading of Rotoviscometer in a range of 120-180 when it has a salt concentration of 12wt%. When it is used as a part of raw material instead of an untreated vitellus solution conventionally used in preparing foods such as custard pudding, a pastry of a cream puff, mayonnaise, etc., it provides foods having extremely improved characteristics of taste such as smoothness, expansion, etc. like those obtained by using a vitellus solution stored in a frozen state. |
