A process for manufacturing instantly cookable European noodles from a mixture of wheat flour, starch, fats and oils, ethyl alcohol and water or water containing additives is disclosed. Wheat flour is kneaded with water or water containing additives in the presence of starch, fats and oils and ethyl alcohol; and rolled, aged, slitted into strips, arranged, gelatinized, pre- dried and then finish-dried. Arranging is carried out with a distributing and arranging device which has segmented sections on fan-shaped inclined planes, and distributes and arranges the noodle strips spaced apart from one another. <IMAGE> |
