PURPOSE:To prepare a multilayered cake, contained in a closed container, and having a very beautiful appearance of the respective layers easily with certainty. CONSTITUTION:A raw material solution capable of gelling on cooling or heating is filled in the bottom of a heat-resistant container having a sidewall tapered to the bottom, and a loaf of a cake, prepared by kneading 0.1-1% concentration organic acid with a dough, and baking the resultant dough, and having almost the same size as the inside diameter of the container is pressed into the container. An organic acid or alcohol liquid or a mixture thereof is sprayed or dropped on one side of the loaf before or after filling the loaf of the cake, and the container is then closed tightly, deaerated, sterilized at 80-100 deg.C and cooled. In the case of two or more gelatinized layers, the container is heated or cooled each time when the raw material solution is filled in the container to gelatinize the raw material solution, and the loaf of the cake is then filled therein. |
