CLARIFICATION OF POLYSACCHARIDE-CONTAINING FERMENTATION PRODUCTS

An improved process for degrading suspended matter in polysaccharide solutions produced in xanthomonas fermentation of carbohydrates, which involves treatment of the polysaccharide solution with an ertyme complex having celllytic, beta -1,3-glucanase, and protease activity derived from Pellicularia filamentosa and/or Pellicularia sasakii; together with a solid composition containing said polysaccharide and up to 0.5 % wt. of the said enzyme complex.
