摘要 PURPOSE:To prepare a GYOZA(a fried dumpling stuffed with minced pork) capable of giving the finished soft and nice GYOZA only by arranging in a flat pan and baking the GYOZA on eating, by treating a raw GYOZA with hot water, and steaming the treated GYOZA. CONSTITUTION:Each raw GYOZA (a fried dumpling stuffed with minced pork) containing ingredients wrapped in a dough sheet of a desired size is arranged on a synthetic resin vessel (A) having several drainage holes 1 perforated on the bottom thereof, and hot water at 80-90 deg.C is showered on the raw GYOZA for 10-30sec, or the vessel containing each raw GYOZA is dipped in hot water at 80-90 deg.C for 10-30sec to drain the water from the drainage holes 1. The GYOZA is then finished by steaming in a steam chamber at 90-100 deg.C for about 5min and then packaged in a decorative pack.
