PURPOSE:To prepare a bound molded article of loosened fish eggs, by dipping the loosened fish eggs in a saline solution, dipping the fish eggs in a saline solution containing a seasoning, dehydrating the fish eggs centrifugally, packing the eggs in a mold, and pressing, dehydrating, binding and molding the fish eggs. CONSTITUTION:Eggs of a smelt, herring, etc. in the loosened form are washed, dipped in a saline solution in >=10% concentration and treated while slowly agitated. The eggs are then dipped in a saline solution in 2-5% concentration containing a seasoning, flavor, etc., treated while lightly agitated, introduced into a bag made of a filter cloth, and dehydrated by a centrifugal separator. The centrifuged eggs are then packed in a mold consisting of a female mold 1 having drainage holes 2 and a male mold 5 through a filter cloth, pressed at a pressure in the range of 1-10kg/cm<2>, dehydrated, bound and molded. The molded article of the eggs contained in the filter cloth is then taken out of the mold and cut to a suitable size and shape. |
