PURPOSE:To thicken an emulsion, in preparing an oil in water type emulsion containing sugar fatty acid ester, by adding an acidic substance to carry out pH adjustment. CONSTITUTION:In preparing an oil in water type emulsion by adding an aqueous phase component to an oil in polyhydric alcohol type emulsion obtained from sugar fatty acid ester, polyhydric alcohol and an oil, an org. acid such as acetic acid or propionic acid, an inorg. acid such as hydrochloric acid or sulfuric acid or an acidic substance such as an amino acid is added to adjust pH to 4.5-6.6. By this method, because the emulsion is thickened, cream like viscosity is obtained even in a system with a reduced solid fat content. |
