In an apparatus for injecting a fluid, eg. steam, into a bakery product, the hollow injection needles are arranged on a needle carrier and can be intermittently connected to a fluid source, the distance between the needle carrier and the bakery product being changeable in order to stick the needles into the bakery product. The distance between the needle carrier and a bakery product bench can be adjusted in such a manner that on reducing this distance, the needles, penetrating through bench recesses, pass into the bakery product, the latter being held down on the bench surface by a holder. After injection is complete, the distance between the needle carrier and the bench is increased again in order to pull the needles out of the bakery product and to bring the needle carrier and/or the bench into the starting position.
