发明名称 PREPARATION OF VINEGARED EGG
摘要 PURPOSE:To shorten the time of filtration process and the time necessary for dissolution in the preparation of vinegared egg, and to improve the operation efficiency of the whole process, remarkably, by dissolving dried powder of eggshell in vinegar, etc., and mixing the filtrate of the solution with liquid egg. CONSTITUTION:Dried powder of eggshell, e.g. eggshell powder obtained by washing eggshell with water, draining the shell, drying at about 100-500 deg.C with a drum drier, etc. to a water-content of <=1%, preferably <=0.5%, and pulverizing preferably to the size to pass through a 100-200 mesh sieve, is dissolved in vinegar or a solution of an organic acid permitted as a food additive. The solution is filtered and mixed with liquid egg.
