<p>Machine has two, horizontal, cylindrical brushes rotated on parallel axes and spaced so that the ham can be passed frictionally between them. A nozzle directs compressed air on to the side of the ham contg. the chump-end bone. Pref. a horizontal conveyor band advances the ham, knuckle first, beneath an air nozzle pivoting freely in a vertical longitudinal plane. The nozzle has an extension finger which rides on the ham to pivot the nozzle. Downstream of the nozzle, the ham contacts first and upper brush and then a longitudinally overlapping, lower brush. As the ham passes under the nozzle it pref. has to tilt over a crest of the conveyor band before it leaves the blowing zone of the nozzle. The conveyor band is pref. made of open mesh, e.g. stainless steel wire, with spaced transverse push bars. Thorough desalting is combined with mechanisation which reduces prod. labour cost.</p> |
