PURPOSE:To prepare a food having improved taste, by adding 0.1wt% one or more anserine, carnosine and balenine to the food or seasoning, and adjusting the pH to 6.5. CONSTITUTION:A imidazole compound selected from anserine, carnosine and balenine is added to a food or seasoning to give its content of 0.1-2wt% by a suitable method, and the pH is the adjusted to 6.5 to increase the body of the food. Alternatively, a solution or powder containing the compound, e.g. a beef extract, pork extract or bonito extract, may be added and mixed therewith. |
