PURPOSE:To obtain a tasty flavored vegetable fried with an oil free from scorching, etc., by heating and softening the flavored vegetable in a wet condition, frying it with the oil so that water is partially evaporated. CONSTITUTION:A flavored vegetable such as a carrot, celery, onion, etc. is cut into a proper size, subjected to heat treatment such as boiling, steaming, heating by an electronic oven, etc. in a wet condition so that it is softened, and it is fried with an oil until its weight is reduced to about half based on the initial weight by vaporizing water, to give a product. |
