Method for producing fizzy granules, in which use is made of a fixed crystalline, edible organic acid and an alkaline or alkaline-earth metal carbonate forming CO2 on reaction with the organic acid in an aqueous solution, in the following stages: a) a proportion of the total acid quantity in the first coating composition and a proportion of the alkali metal carbonate in this composition containing at least one alkali metal carbonate are dissolved in the solvent for the acid and reacted with each other; b) the acid crystals are coated with the preliminary reaction solution thus formed; c) the acid crystals are thoroughly mixed with that proportion of the first coating composition which has not been used to produce the preliminary reaction solution; d) a solid coating layer consisting of alkali and/or alkaline-earth metal carbonate is thoroughly stirred so as to react with the preceding coating layer; e) final drying. This is followed by intermediate moistening of following coating layers using the preliminary reaction solution as moistening agent, and the solvent can be heated to ca. 35-40 degree C before addition of the acid and/or the alkali metal carbonate. After the final coating layer has reacted, alcohol can be added, and this is followed by drying. At least one coating composition or one preliminary reaction solution can contain starch or an alakali and/or alkaline-earth metal salt which is sparingly soluble or does not tend to react with the edible organic acid. The application also includes the effervescent granules which have been produced according to the invention and which are used for producing fizzy drinks or tablets.
