<p>A continuous evaporator comprising an evaporating chamber and a heating chamber, a pump which recycles process fluid through the two chambers in series and a throttling valve which holds a higer pressure in the heater than in the evaporating chamber. The evaporator offers precise control of pressure and temp. conditions which can prevent carbonisation of the product with resulting damage to flavour and appearance. The flow of the process liquid is such that encrustation of heating surfaces is prevented. For concentrating liquid foods, partic. juices of vegetable products, e.g., orange juice, grapefruit juice, tomato juice.</p> |
