PURPOSE:To obtain a delicious food suitable as a food or seasoning, by decomposing the waste of shellfish other than the shell successively with an alkali protease and a neutral protease, removing the solid component from the decomposed product, and purifying and concentrating the product. CONSTITUTION:The waste shellfish other than the shell, e.g. guts, mantles, etc. is maintained to >=10pH by adding an alkali, and treated with an alkali protease active at >=10pH at the optimum temperature range of the protease, i.e. about 50-55 deg.C to decompose and dissolve the proteins. The decomposed product is adjusted to nearly neutral state by adding an acid, and treated with a neutral protease at the optimum temperature range of the protease, i.e. about 45-50 deg.C to effect the further decomposition. The solid components are removed from the decomposition product by solid-liquid separation, and the liquid component is adjusted to <=4.6pH with an acid, filtered optionally in the presence of a coagulating agent and a filter aid, adjusted to nearly neutral state by adding an alkali, and concentrated to obtain the objective food. |
