The preserving boxes in which the food products, such as meat and sausages, are placed are subjected to agitation and to a rotational movement during at least a part of the heating and cooling times. The appts. avoids any sepn. of fats during cooling. The external receiver rests on a shaking mechanism; the lower portion of the receiver is double-walled and the space between can be heated by an electric heater. The space can be closed by valves and can act as an autoclave during the prepn. of fully preserved foods. A receiver, of perforated sheet, can rotate inside the external receiver in bearings fixed to the latter; it is driven by the upward movement of the recipient through a toothed rachet wheel and rods articulated to the base of the appts. The recipients are supported on two leaf springs and the agitating mechanism consists of an eccentric shaft driven by a reducing motor. |
