PURPOSE:To prepare process unpolished rice to be boiled like polished rice, by washing unpolished rice with water, boiling or steaming it slightly, drying it, damaging its surface. CONSTITUTION:Selected unpolished rice is washed with water, immersed in water for about 2hr, water is removed, and the rice is slightly boiled or steamed so that it is gelatinized. The boiling or steaming is carried out for about 30min in such a degree that the unpolished rice is completely gelatinized in preparing boiled rice. The rice is dried by hot air, etc., passed through between two rolls provided with many small protrusions so that the surface of rice grain is damaged to give processed unpolished rice. The processed unpolished rice can be boiled like polished rice by a common rice cooker for polished rice. |
