PURPOSE:To obtain in high efficiency the titled cyclodextrin having such branch segment as to be made up of branched maltoligosaccharide, resistant to the action of amylase, by mixing a branched maltoligosaccharide and cyclodextrin followed by action of a branch-cutting enzyme. CONSTITUTION:A branched maltoligosaccharide or saccharide mixture containing said saccharide and cyclodextrin are mixed followed by action of a branch- cutting enzyme (e.g. pullulanase, isoamylase), thus obtaining the objective multiply branched cyclodextrin with the branch segment being branched maltoligosaccharide (e.g. 6<2>-alpha-glucosylmaltose, 6<3>-alpha-glucosylmaltotetraose) and the normal ring segment representing alpha,beta,gamma-cyclodextrin. USE:Pharmaceutical base, clathrate material; in addition, health foods and specialty foods associated with Lactobacillus bifidus growth factor, fatness control, etc., because of its low digestibility. |
