Relatively unconcentrated coffee extract with a solids content of 20 to 30% by weight is chilled under conditions which uniform crystals from 20 to 80 mils in size. These conditions include a "U" factor of from 75 to 100 BTUs/hr/ft<SP>2</SP>/‹F and a #T of from 75‹F to 60‹F. The resulting ice-cake is separated by a three-stage process comprising a first low-speed centrifugation, a washing step in the latter part of this centrifugation and a relatively high-speed centrifugation.</p> |
