<p>The machine comprises a fish holding member which has a continuous channel subdivided into a single file series of pockets, each to hold one fish belly downwards. The machine also has a cutting head which presents a filleting blade in alignment with the centre line of the pockets. The cutting head and the fish holding member are relatively displaced along this centre line with the cutting head blade extending into the holding member channel. Where necessary, the channel has a cover to prevent fish falling out. After being filleted, each fish is mechanically discharged from its pocket. Pref. the fish holding member is a rotary wheel with a circumferential channel. The cutting head has a rotary filleting blade with its cutting plane coinciding with the centre line of the wheel channel pockets. Pref. the blade cutting edge is washed continuously with a water jet.</p> |
